Classic Vanilla Cupcakes

125g unsalted butter, softened

125g caster sugar

2 large eggs

125g self-raising flour

1 tsp baking powder

1 tsp vanilla extract

2 tbsp milk

Preheat oven to 180°C (160°C fan). Line a cupcake tray with cases.

Beat butter and sugar until pale and fluffy.

Mix in eggs, vanilla, and milk.

Fold in flour and baking powder.

Spoon into cases and bake for 15–18 mins.
