Blackberry Ripple Ice Cream

Blackberries are at their prime in September and You can usually forage wild brambles or blackberries from hedgerows or old woodlands. This simple dessert combines the tart, earthy tones of the blackberries with the creaminess of vanilla icecream and rippled together makes for a gorgeous deep purple hue. Serve with fresh blackberries, some shortbread crumble or dark chocolate chips for an indulgent addition.

Fig Leaf and Vanilla Creme Brulee by Graham Hornigold

If, like me, you’re lucky enough to have a fig tree in your garden- you’ll know the frustration of seeing the fig tree come to life every summer- yet it is seldom warm enough in England to ripen the fruit. However, despair not- the leaves are equally as tasty and delicious! The flavour is almost a cross between fig and coconut, an unusual pairing but one that works so well in this brûlée. Best eaten simply, with caramelised sugar and served with fresh juicy figs.

Vanilla Bombolini

These bombolini are an irresistibly light adaption of the classic Italian doughnut. Rolled in vanilla sugar and filled with a light vanilla crème, they are perfect garnished with the best of Summer’s strawberries. Infusing used vanilla pods into sugar allows you to use all of the vanilla pod- keep on hand in the pantry for any recipes requiring vanilla.

Braided Apple Turnover By Heather Kaniuk

Similar to an apple pie, this turnover is sure to become a favourite. The braided pastry makes for an attractive dessert, which can be served warm or at room temperature. Leftover turnover (if there is any!) is also great for putting in lunchboxes or as an on-the-go snack. We like to use a combination of apples, giving a range of textures and ensuring a balanced apple flavour that’s not too sweet. You can either make the puff pastry or buy pre-made- if making from scratch the dough can be made up to 3 days in advance and kept in the refrigerator, or frozen for up to one month.

What is the first thing that comes to your mind when thinking of indulgence? Brownies? Cheesecake? How about cheesecake brownies? Yes you heard me! Why choose one of your favourite treats when you can have both?! You are welcome! I first made this recipe back when I was a cake decorator and I can tell you it was a best seller for a reason! The brownie itself is one of the most delicious brownies I have ever tasted and I have tried a bunch of them. You can skip the cheesecake part completely and just make the delicious brownies! Personally I wouldn’t because if you are going to be naughty you might as well go all the way!

Elderflower and Vanilla Jam by Graham Hornigold.

Elderflowers are a quintessential sign of the British summertime and have a distinctive floral scent. The flowers bloom for just a small time, usually in late May- early June and are best picked after rain or on a dewy morning. The trees grow abundantly- we forage our local area and can easily pick sufficient flowers in just a short time. This jam is very soft- more like a jelly- and preserves the wonderful flavour all year round, perfect spread on fresh sourdough, crumpets or scones.
