Tahitian Vanilla Soufflé

  • 250ml milk

  • 1 vanilla bean (Tahitian)

  • 3 egg yolks

  • 3 egg whites

  • 50g sugar

  • 25g flour

  • Heat milk with vanilla.

  • Make a roux with butter & flour, whisk in hot milk.

  • Mix in yolks, then fold in whipped whites.

  • Bake at 190°C for 15 mins.
